Eat Just to Launch French-Style Vegan Egg Bites Nationwide

In March, California-based startup Eat Just is launching a line of vegan JUST Egg Sous Vide bites at select grocery stores nationwide. The new egg bites are made through the sous vide (a French term that means “under vacuum” in English) cooking method where food is vacuum-sealed and cooked at a low temperature. The mung bean-based JUST Egg Sous Vide bites will be available in four, world cuisine-inspired flavors: America (roasted potato, dill, chives, red bell pepper, and black pepper); India (curry, broccoli, cauliflower, coconut milk, and lemongrass); Japan (portabello mushrooms, yams, togarashi, soy, and tamari); and Mexico (roasted poblano peppers, chipotle chile powder, black beans, corn, and lime). The new vegan egg bites will be sold frozen in packs of four and can be cooked in an oven, toaster, or microwave.

For the launch, Eat Just partnered with Cuisine Solutions, Inc., the world’s leading manufacturer and distributor of sous vide food, which will develop and produce the vegan sous vide egg bites globally. “The Cuisine Solutions team is the best in the world at what they do,” Josh Tetrick, co-founder and CEO of Eat Just, said. “We partnered with them because of their unparalleled expertise and leadership in the sous vide industry and their commitment to make our food system even better. We’re excited for consumers to taste what we’ve been working on.” 

International Sous Vide Day
The partnership was announced in celebration of the 50th anniversary of the modern sous vide cooking technique popularized by Cuisine Solutions and its Chief Scientist Dr. Bruno Goussault, PhD, widely recognized as the father of modern sous vide. Eat Just is entering the arena during this year’s International Sous Vide Day celebration on January 26 which includes world-renowned chefs participating in cooking demonstrations and panel discussions about the sous vide technique. Tetrick and Felipe Hasselmann, President and CEO of Cuisine Solutions, will join the Sous Vide Day celebration with a discussion about changing consumer habits and the evolution of the global food system.

Vegan eggs for all
In addition to the new Sous Vide bites, Eat Just offers its mung bean-based vegan egg in liquid and folded formats. Since the retail launch of JUST Egg in April 2019, the company has sold the vegan equivalent of 80 million chicken eggs. JUST Egg is also available at a growing number of restaurants worldwide, including its most recent launch at China’s major fast-food chain Dicos—which replaced the chicken eggs it previously served with the mung bean-based product in seven menu items in early January.
