
This vegan French toast with banana makes such a delicious and easy breakfast for the weekend! It’s moist, sweet, filling, and ready in only 5 minutes!
Why This Recipe Works
Traditional French toast consists of slices of bread that are soaked or dipped in eggs and milk and fried in butter or oil afterwards.
Fortunately, it’s pretty easy to make vegan French toast without milk and eggs. It turned out super moist, sweet, and it’s just perfect for the weekend.
For my recipe, I used a batter that consists of mashed bananas, almond milk, cinnamon, and natural vanilla extract.
The mashed banana serves as a great egg replacement in this recipe. And at the same time it’s also an awesome sweetener.
I tried different kinds of oil for this recipe. My favorite by far was coconut oil. It worked best in getting the French toast nicely browned. And it also added some great coconut flavor, which blended perfectly with the rest.
Cinnamon and vanilla extract add some nice flavor. Serve it with a bit of maple syrup, vegan butter, and fresh berries for ultimate taste.
I love that you need only very few ingredients for this recipe. And you can find all of the ingredients in any regular grocery store.
What Goes Into This Recipe:
- Banana – make sure that it’s ripe (it should have quite a few brown spots). The riper it is, the sweeter it is.
- Bread – I prefer crusty white bread. It can be a couple of days old.
- Almond Milk – I usually use unsweetened plant-based milk. Soy or oat milk does also work.
- Coconut Oil – it adds a light coconut flavor.
How To Make This Recipe:
1. Step: Cut the bread into thick slices.
2./3. Step: Mash the banana with a fork in a shallow bowl.
4. Step: Add the almond milk together with the cinnamon and the vanilla extract.
5./6. Step: Then dip each slice of bread into the banana almond milk mixture for about 10 to 15 seconds.
7./8. Step: In a large pan, heat some coconut oil over medium heat and cook each side until golden. For me, this took about 3-4 minutes on each side.
Recipe Notes:
- Make sure to use ripe bananas. They’re much sweeter.
- It’s best to use day-old bread. It will soak up more of the batter without falling apart. Older bread is also fine, but I wouldn’t recommend using freshly bought bread.
- I like this recipe best with coconut whipped cream and fresh berries.

Chill your coconut cream in the fridge overnight (make sure not to shake it so the cream and the liquid keeps separate).

Mash the banana with a fork in a shallow bowl and add the almond milk together with the cinnamon and the vanilla extract.

Then dip each slice of bread into the banana almond milk mixture for about 10 to 15 seconds. In a large pan, heat some coconut oil over medium heat and cook each side until golden. For me, this took about 3-4 minutes on each side.

Make the coconut cream: Place the hardened cream in a mixing bowl. Beat for 30 seconds with a mixer or until creamy. If you like you can add some agave or a sweetener of your choice.

Serve the vegan French toast with the coconut cream and the berries.
